Recipes: Thai Salad Dressing: Serves 4. You will need: 2 tbsp Thai Taste Fish Sauce, 2 tbsp Thai Taste Palm Sugar, 3 limes, squeezed, 3 garlic cloves, peeled, 15g coriander leaves, 1 bird's eye chilli. 1. Using a pestle and mortar, pound the coriander leaves, chilli and garlic into a paste. 2. Add the Thai Taste Palm Sugar, Thai Taste Fish Sauce and lime juice. Stir until the sugar has dissolved. The dressing should have a sweet, sour, hot and salty flavour. Ideal with Som Tam (Green Papaya Salad with Prawns) or Yam Ruam (Seafood Salad). Tips: Prepare this dressing no more than 2 hours before serving, as the flavours will dissipate with time.
