Tio Pepe is the best selling and top trending Sherry, the flag carrier of Gonzalez Byass and the most well-known Sherry worldwide. Tio Pepe is a dry Fino Sherry of 4 years of ageing. Due to the fact that the flor protects Tio Pepe from the oxygen it has been able to maintain a pale golden yellow colour.

The Palomino wine is fermented in stainless steel tanks and fortified to 18% alcohol, the Pedro Ximenez is fortified to 15.5%. The wines then enter their own separate solera systems to begin ageing. After four years the wines are blended and aged through the Solera 1847 solera for a further 8 years.

Tasting notes: Uncompromisingly dry, elegant and distinctive. It is soft and has a pleasant mouthfeel while being very dry, salty and yeasty.
On the nose sharp yet elegant aromas of the yeast from the flor balanced with almond notes typical of the Palomino variety.
On the palate completely dry with reminders of almonds, green olives, green apple and slightly bitter. Surprisingly fresh after 4 years spent in oak with a long and complex finish.
Serving suggestions: Tio Pepe is the perfect partner for savoury nibbles, olives, fried fish, Spanish ham and of course tapas. Tio Pepe is best enjoyed within a year of bottling. Drink it straight or on ice. Always serve chilled. Refrigerate after opening and drink within a few weeks.
