Valcolatte Italian Mozzarella Fior di Latte Cheese is loved across Italy for its fresh, delicate, and milky flavour. Made using only natural lactic ferments and 100% Italian Friesian cow's milk that has been expertly delactosed. This gentle process allows those with lactose intolerance to enjoy authentic mozzarella without digestive discomfort.

The Valcolatte name represents over a century of dairy expertise. It began in 1914 in Stagno Lombardo, Cremona, when Enzo Panizzi signed his first dairy contract before leaving for war. His grandmother Cesira ran the dairy in his absence, and upon his return, Enzo found it thriving. The Panizzi family passed down their cheese-making tradition, eventually establishing Valcolatte in Montanaro in 1960, with a focus on premium fresh cheeses.
