Preparation and Safety
This mix will make the sponge base for a 7 victoria sponge or 12 cupcakes.
To make sponge base: You will need 2 medium eggs, 8 tbsp (120ml) semi skimmed milk, 2 x 7 round cake tins, greased and lined. Pre-heat oven to 180°C / Fan 160°C / Gas 4. Empty the sponge mix into a large bowl and add the eggs and milk. Using an electric whisk, whisk on a medium speed for 2 mins. Divide the mixture evenly between the prepared cake tins. Bake in the centre of the oven for 25 minutes, until risen and cooked throughout. Ensure piping hot and do not reheat. Once baked, remove from the oven and leave in the baking tins to cool for 5 minutes before transferring to a wire rack. Once the cakes are completely cool, sandwich together with a filling of your choice. For cupcakes, divide the mixture between 12 cupcake cases and reduce the baking time to 18-20 minutes.
