Vasterbottensost, with its aromatic and piquant taste, holds a very special place in Swedish cheese history. The cheese was a result of coincidence has been manufactured in Burtrask in the county of Vasterbotten since 1872.
The myth has it that an attentive suitor distracted dairy maid Eleonora Lindström so much that she forgot about the cauldron standing over the fire while making cheese. This meant that the cheese-making process was prolonged and the cheese was heated up and stirred more times than normal.
