Cooking guidelines Oven cook - From Chilled. Handling raw meat safely: this product contains raw meat and must be cooked according to the cooking instructions. Electric 200 °C, Fan 180°C, Gas 6, 40 mins - 60 mins Rare: 40 mins Medium: 50 mins Well Done: 60 mins Needs Cooking - Remove all packaging (including pad). Allow product to stand at room temperature for 30 mins before cooking. - Preheat oven to Electric 200°C / Fan 180°C / Gas 6. - Oil and season surface of the meat. Preheat pan until smoking hot, add the joint and sear all surface until golden brown. - Transfer the joint to a preheated roasting tray and place in the centre of the oven for: rare 40 mins / medium 50 mins / well done 60 mins. Baste the joint frequently throughout cooking. - Remove, cover with foil and rest for 15 mins before carving. Do not reheat.
