Ours courgettes are available year-round. They are wonderfully wonky with curves in just the right spots. Soaked in sunshine, they develop fantastic flavour and texture. Not only are they quite high in vitamin C and antioxidants but also contain more potassium than a banana.

While very popular sliced into little moons and roasted, a fun and different way to eat courgettes as a healthy alternative to carb-y pasta is by using them as 'noodles'. Use either a spiralizer or hold them lengthwise and run a julienne peeler along their horizontal axis to get noodle-like spirals from your courgette. These zoodles cook faster than dried noodle so all you need to do is sauté them with some olive oil, minced garlic and shaved cheese for an easy treat.
