Preparation and Usage We enjoy prepping a simple lime pickle that requires minimal ingredients and time and mainly relies on salt and the lime's juice for preservation and softening. Wash and dry your limes, cut them into eights. Place the lime wedges with peeled and chopped ginger root and green chillies in a jar in layers. Make sure to sprinkle adequate salt over each layer to ensure even distribution. Pour the juice of the extra lime into the jar and seal the lid tightly, leaving a little space at the top for movement. Shake the jar well to mix the contents thoroughly. Store the jar in a cool, dry place at room temperature, and make sure to shake it a few times a day to ensure all the lime pieces are coated by the salt to draw out the juices. The pickle will be ready to use in about 4 days. The flavour and texture keep maturing and mellowing over the following weeks as the salt and acid from the lime juice soften the rind over time. Once made, the salt acts as a preservative, so the pickle can be kept at room temperature, but it is safer to refrigerate after the initial maturation.
