Preparation and Usage As an ingredient aubergines are incredibly versatile and soak in tons of flavour making them popular in stews hearty dips or dishes with a little gravy. Their flesh being mild and subtly flavoured is dense firm but spongy when raw and turns tender and creamy when cooked. An 80g serving of aubergine will count towards your 5 a day. One of our favourite techniques is to roast aubergines on an open flame or barbeque. This method brings out their subtle nutty flavour. A Mediterranean dish called Baba Ghanoush is the perfect one to try. Roast your wonky aubergines on high heat open flame until its meat is tender and collapsing. Remember to pierce the vegetable all over with a fork to allow steam to escape. Then blitz your well charred aubergine with some tahini paste fresh lemon juice 2 medium cloves of garlic minced or crushed a large glug of extra-virgin olive oil salt to taste a pinch of ground cumin and some smoked cayenne pepper. Blitz until creamy with a few chunks. Finally serve with finely chopped parsley on top.
