History: Cramele (literally 'cellar') Recas is a premium wine estate located on the far western fringes of the Romanian region of Transylvania/Banat - near Romania's third largest city, Timisoara. Founded in 1998, Cramele Recas is a private Romanian company owned by winemaking team made up of three families, including husband-and-wife teams Philip and Elvira Cox and Hartley Smithers and Nora Iriate. The vineyards, said to be some of the oldest in the world, were first planted in the area by the Romans with documents dating back to 1447 on the Recas vineyard land.

Vinification details: 90% machine harvest 10% hand harvest estate grown fruit was harvested and taken quickly to the winery, where it was gently destemmed and crushed. Cooled immediately to 8°C the grapes were then pressed in a vacuum press under nitrogen to prevent oxidation, before being transferred to decantation tanks for 24 hours until completely clarified. Inoculated with selected yeast the wine was fermented in stainless steel at very low temperatures between 8 and 10°C for 25 days, before clarification and bottling young.
